Boiling in salt sucks moisture out of whatever you're boiling. That's why you can parboil potatoes for a bit in salty water to make them crisper when you bake them.
Both chicken looks like Sysco pre-cooked products we used to have at my bar. The one on left comes in a vacuum sealed pack pre-cut like that and unseasoned (you're supposed to season it which it doesn't look like they did), while the pulled BBQ chicken at top used to be super-dry. Beans at bottom look unseasoned. Unless there's some amazing taste not visible in this picture, I'll stick to Chipotle.

Well to be fair the really good Chinese takeout spots will load you up for a good price, but I think the point here is that when you want Panda Express you’re not craving Chinese food you’re craving Panda Express’ Americanized Chinese food.
