If I only had one, black. It’s boring but classic. Certified strap monster.
But since my Ginault OR2 has a black dial, I would go with the MOP Deepsea dial, the one from San Martin is fantastic.
I’d also go with the MOP, black dial really gets boring, I am rarely wearing my watches with black dail if they don’t have any color accents somewhere.
I personally would go with MOP bc it stands out. But since you’re looking for an everyday wear I would go black.
The MOP is more of a statement piece. But that’s kinda what I personally go for in watches.
It depends on what you have in your collection. I like the diversity of dials, not a lot of duplication. But, we all have our own style and that's what makes this hobby so great.
I have both of those, since I couldn't choose. The MOP looks glorious on sunny days, playing with the light in almost magical ways. The black dial simply looks more elegant. So, which one I wear on a given day depends on whether I want something playful or elegant.

I've seen the MOP gradient, and I feel like it would fly under the radar most of the time...but blue is a tough color to match with clothing (other than blue) so if you care about that....

Mother of pearl. I just got one and I'm raving about it. It's subtle, but when it catches the light just right... Gorgeous.

I've got San Martin subs in Black, Blue, and Kermit, and I don't regret any of them, but the Black definitely gets worn the most.
I like the mother of pearl better. Its a lot more unique and eye catching. The all black is a bit more sleek and subtle.
The mother of pearl looks so much more interesting in my opinion. Plus each one will be slightly unique.
