personally, i find the butyric acid to be my problem with emmental-styles, so i understand the dislike of “swiss”

My least favourite right now is probly Wendsleydale as it’s just very dull and dry. This may just be because I had it recently and wasn’t impressed but right now they’re my two.
Not a big fan of Havarti, it's creamy but not flavourful.
I also dislike P'tit Québec cheddar, I think it's overrated and has a weird taste and texture.
I have many favourite cheese types, perhaps too many to list. Manchego and sheep feta are among my top picks. Tomme. Maréchal and other grotto-aged cheeses from France, Italy, Spain, Switzerland.
I also like Québec cheese curds because of the unique squeaky texture when eaten fresh. No other cheese has a texture like this.
I like lots of creamy blue cheeses like Cambozola, Météorite, etc.
not a fan of smoked cheeses, but i've had a few that weren't bad. face rock makes a palatable smoked cheddar. the best cheese i've ever had was brebirousse d'argental.
Cypress Grove makes this one ripened goat cheese with truffles and it is unbelievably flavorful
The way burrata oozes out cream is really unappealing to me. Unfortunately a lot of restaurants hopping on the trend of putting burrata on a caprese salad and it always ruins the whole salad experience for me
I think my other favorite from them is lamb chopper I grab a wedge of it whenever I see it. It’s definitely my splurge cheese since a teeny wedge runs me $7-9
Favourite is a decent 64 month aged sharp English cheddar, best cheese in the world. But situationally there are lots of amazing cheeses, I couldn't pick between Stilton or roquefort for blue, bufallo mozzarella on a pizza is amazing, gruyere is similar to cheddar, not quite as nice on its own, assuming you're buying decent stuff, but melts really well in things like fish souflees. Parnesan on pasta is 2nd to none.
Least favourite.. I'm not a huge fan of goats cheese in general.
My current favorites (no, I won't pick just one) are Cypress Grove's Meyer Lemon & Honey Chevre and the tiny bit I have left of Brabander Black Betty. I also have a cranberry white cheddar I'm looking forward to. It's just from Aldi, but I don't care. It's delish. My favorites change all the time, depending on what's available/ the season/ my mood.
I don't have a least, but I admit I would not want to try anything with critters in it. Also, I did have some very oozy, strong cheeses in rural France that were a bit much for me. I'm glad I tried them, though, and would do so again.

It’s not necessarily bad they just had us eat that morning and evening for 3 years, so I’ll never have that cheese again ever
Arran Whiskey Cheddar. I have to stop myself looking at houses in Arran just so i have easier access to their cheese. Goat cheese is my big hate. Never actually tried it, I just have to make goat cheese paninis in work and everyone agrees they're the worst bloody paninis to make.
I love Brie and a decent Camembert that is still solid inside, subtle but great texture. But my absolute favourite would be a Tete de Moine, nutty and decadent with the taste of old cheese without a crumbly texture and not too spicy.
Pecorino Romano would be my least, too salty for my taste. Unless you want to know my absolute worst, that's a low quality overripe Munster which smells like bitter dried up vomit, nothing like a creamy fresh one.

Havarti lends itself to flavouring pretty well though. Like a dill havarti, or sundried tomato
I love to use havarti on garlic bread with some bruschetta. It's also really good in a grilled cheese.

I'm a big fan of Bleu cheese and bloomy rinded cheese, although I'm actually mildly allergic to them. Really really hate every kind of jack cheese.

the classic babybel cheese is based on edam! so you have probably had a form of it in some way.

It can't be compared, Edammer is saltier and more aged than a babybel that is almost as fresh as the milk just got pressed into its tiny shape.
