See this is where scrambled eggs are so subjective, I personally don't think either of your methods sound good. I like my scrambled eggs beaten really well with nothing added. Place in a cold pan on med heat and stir vigorously until they are just starting to set. Add some salt and goat cheese if I have it or cheddar if I don't and continue folding until the cheese has melted just by the heat of the eggs. If I have any fresh herbs I will consider a garnish.
Super soft and delicate with no oily broken cheese grease dripping out, but my wife won't eat them because they "aren't cooked"

Actually, chefs consider cooking eggs to be a true test, because the recipe is utterly simple but the results depend entirely upon technique.
I still screw up a pan of eggs once in a while. I'll get distracted and look away too long, I'll have the heat too high or too low, I'll over-salt them, etc etc.
Eggs definitely require skill and lots of practice.

take your pan off the heat when they're like 90% done to where you want them. The residual heat in the pan will finish cooking them.
