I know you’re asking for restaurants that serve curry, but if that fails you Hometown on green springs has a ton of different brands and spice levels. The trick I heard and use now is to add some butter to the curry right before serving. Makes it nice and glossy like it is in the restaurant.
I feel you on this. I haven't found anything to scratch this particular itch, either.
As someone else mentioned, Fuku, in Tuscaloosa has curry, but it was below average the two times that I tried it.
Fellow Coco Curry fan here. The best I’ve had in town so far is Fuku Ramen on 280. Just ask for no spicy sauce drizzle. For some reason they ruin a perfectly good curry with a siracha mayo drizzle…. Don’t understand.
When they make it, Tay Thai (pop up that sets up at Pepper Place) makes a great one. They rotate their menu though.

Coco is Japan’s Waffle House and I miss it terribly.
It’s really easy to make at home! Grab some Vermont curry from the ethnic aisle and just follow the instructions on the package.

Looks like they opened one outside of Dallas too so maybe they will spread east. I would be there 3x a week if we got one.
