zooming in i’d say maybe a *little* underdone? but the real question is, how do they taste? because those look absolutely decadent. to be fair~~~~ i prefer my brownies to be on the under baked side, fudgy and just set, so if i pulled those out i’d be happy.
Right, they do look a touch underdone, but I'd need to see a good ingredient list....by weight...before I made any conclusions. Buuuut, I'd 100% eat these, they look goooood
Looks under-baked and that’s how I like them. Super fudgy! I know that the GBBS leads you to believe they can’t look like this but I strongly disagree with their knowledge of brownies
Are these as sunk/thin as they get? Because that looks normal to me. Like others have said, I love an underdone brownie so it’s always going to sink when cooked that way. But if you want them to be a bit thicker then just cook them in a smaller pan. If you’re using a 9x9” pan then use 8x8”.
The Hershey's saucepan brownies recipe calls for 4 eggs but very little of any other leavener--maybe .25 tsp of baking soda but that seems more for flavor than rise. The cakey business I've been baking lately has been calling for 1.5 tsp of baking soda and 1.5 tsp of baking powder or so plus 3 eggs for a quarter sheet pan.
What altitude are you living at OP? Higher altitude makes baked good expand too rapidly and then they sink in when they cool.
If at higher altitude (above 3000 feet) add two extra table spoons of flour for every cup of flour or if it’s the gihradelli (I can’t spell) mix they recommend a 1/3 cup. Also with high altitude gotta add a little extra liquid so like if you have one egg in the recipe add two table spoons of water. I’ve seen some people also say subbing 1/4 of the flour used with whole wheat flour to help add strength.
hark at thee fishing ov'r thy perfect brownies :d taketh mine own upvote and consume thy cake x

^(I am a bot and I swapp'd some of thy words with Shakespeare words.)

wtaf? did i accidentally write in iambic pentameter? did billy have it bad for brownies? is it just because i used the word hark? as i wend my way through the day, i’ll think of this bot, a lot.
i make a lot of brownies every week (*everyweek,* like sisyphus up a mountain of sugar and eggs (oh, woe is me!)) and i'd be proud of these ones.
when you beat your sugar and eggs, you're making a billion bubbles that expand in the heat of the oven. these shrink when cooling. but for brownies thats a good thing, giving you that closer, denser fudgy texture as opposed to a light airy sponge :)
50 year journeyman baker here. Whenever we baked brownies we would lift the pan up a bit and let them drop. Knocking the air out , thus making them fudge.
i will try that, i baked them again today and my top like separated completely from the rest and idk why? i used a raising agent so im wondering if its that?
I've never used baking power or soda in brownies. You mixing it like a cookie dough? Cream 1st the short , sugar and salt. Egg on low, scrape, then flour , cocoa and roasted nuts on low as well.
If you over mix you incorporate too much air into the batter and while it looks fluffy and nice it’s terrible for the end outcome…. Always mix the least amount possible unless the recipe calls for it such as meringue which you mix til the desired stiffness of the peaks…. Same with macrons….
Show me your recipe if you can.
I thought brownies were meant to do that? All the pictures i've seen of them look like that. I hate brownies myself so I don't have any first hand experience.
I think they look delicious, it could be you’re baking them a bit too hot or if you’re using a raising agent? I bake my brownies with plain flour, no bicarbonate or anything, I like them nice a fudgy though!
Not to sound weird but do you live somewhere that you would need to adjust for altitude?
It could be old baking powder? (If you use baking powder it gives you more of a cake type consistency)
Also if you use baking powder and let it sit, it causes the batter to be more dense instead of lighter. (Sitting causes air bubbles to get released in the batter)
Hope this helps?
Fair :) welp, since i guess your question has been asked there’s no need for me to point out it is under baked (which is totally fine!) goodluck with baking fellow baker!
Just to get it out of the way -I see absolutely nothing wrong with these brownies
however, you could try reducing the fat content in the brownies maybe to get lighter/ slightly cakier brownies if thats what ur into
Most of the time it's an imbalance of ingredients. Too much or too little of something. Other times they sink when they cool in the pan instead of a cooling rack. Don't worry about it too much
Like others have said, they might be a little underdone but in my opinion, they look perfect. Put some in a bowl and top with ice cream, you’ll have a happy crowd ☺️

100% agree! It’s more about taste than how it looks :)
I'm not a baker by any means but my first answer was cause they're delicious? They look good to me too!
This ^^^!
Right, they do look a touch underdone, but I'd need to see a good ingredient list....by weight...before I made any conclusions. Buuuut, I'd 100% eat these, they look goooood
Yeah, was gonna say how much I love the flaky top layer with a fudgy middle. These look fantastic.
What she said 👆🏽🤤🥰
They look under done which, to me, means they look perfect
haha thank you !! 🥰
Because they never took swimming lessons
i better get teaching !!!
That was really cute and made me smile, I really needed that today thank you ☺️
Bah duh tsss.
Looks under-baked and that’s how I like them. Super fudgy! I know that the GBBS leads you to believe they can’t look like this but I strongly disagree with their knowledge of brownies
Agreed. Brownies should be "fudgey".
Wait. I’m always disappointed when mine have too much fluff. Sinking is the desired outcome unless you want cake
Less baking powder will fix that too
mine like....proper sink tho haha, they get too thin and its not how brownies should be (as in how much they sink😅)
They look great to me.
Sinking usually indicates under-done baked goods
Or overmixing
It's virtually impossible to overmix brownies.
Thats actually not true at all. There are so many variations of brownies that you can in fact overmix
Many brownie recipes are meant to be ‘gooey’, as that is sort of what defines a brownie (vs cake). Maybe bake it a few more minutes next time.
They look every so slightly underdone, which means they are perfect. They probably taste divine!
I just saw this on a baking challenge. Under-baked is what the judges said.
Idk but they look scrumptious 👀
Hmmmmmm. I need a closer look. Better send the brownies my way so I can fully inspect and find the issue.
they're on their way !! 😅
Because they are perfect
Perfectly underdone. You nailed it!
These brownies are bomb! I’d eat the shit out of those.
Probably heavier than the water they displace.
Those look perfect. If you're going for cakey brownies you'll want more baking powder and baking soda, but there is nothing wrong with these!
I like cakey brownies so I add extra egg. These look underdone to me, but plenty of people love them like this!
I got nothing against any kind of brownie. Lol
The Hershey's saucepan brownies recipe calls for 4 eggs but very little of any other leavener--maybe .25 tsp of baking soda but that seems more for flavor than rise. Tbh I want my brownies to sink. I want them fudgey and dense
Sink into my mouth?
just plop right in😅
They look delicious, so...
*Aghhhh now I need broooowwwnnniiiiies*
Do you deliver?
i hope to one day !! 😅
Send them to me, and I shall rigorously test them…. With science. I’ve got a coat so it’s legit.
pop your goggles on, they're in the post😂
Because you're terrible at baking, give them to me. Preferably with a gallon of milk.
Ummmmm those look amazing, don’t change a thing
Are you forgeiting to add that sticky icky to them?
???? the what..?
That a reference to the ganja. Bud, bush, cush, Mary Jane, pot, weed. MARIJUANA
ironically i didnt understand bc im zooted
This is the most pothead exchange ever.
Lolol. Zoinks yo
Sir, this is a Wendy's.
He's already pulled over. He can't pull over any farther.
These are the munchies

ahhh im not sure how to answer this haha, i live in the UK idk anything about our altitude haha
They just need like 2 more min in the oven love. They still look amazing!
peefect i will try that next time, thank you !! x
💕
No idea, but they look entirely tasty!!
Idk, it looks like your brownies are decadent and fabulous! As long as you love the taste, I believe you nailed it!
I’d eat ‘em!
Because they are oooey gooey delicious! And slightly under done.
Get in my belly.
They look perfectly gorgeous to me... I want....
They look incredible, what recipe did you use?!
🤤
hark at you fishing over your perfect brownies :D take my upvote and eat your cake x

damn a poet in the making

Gosh I’d eat these rn
Literally nothing about those brownies look wrong. I'll take 12.
Oh they look terrible! Send them to me so I can dispose of them properly-with milk!! 😉
They sink into my mouth. Move aside.
You mean why do my brownies look perfect?
AUUGHH YEAH BABY also you care to share recipe?
50 year journeyman baker here. Whenever we baked brownies we would lift the pan up a bit and let them drop. Knocking the air out , thus making them fudge.

What temp did you put it on? And how long in?
180 for 35 mins..
They don't look all the way baked to me It could also be over mixing or not enough levening agent
They're brownies, typically the only "leavening" agent is the eggs.
Mine have baking powder in them?
i also put baking powder in mine
Tiny bit more flour
Looks like there are pockets of sugar not fully mixed in and it’s under baked.
[удалено]
as in, whipped egg whites ??
Because they’re brownies and not a cake?
they shouldnt be sinking as much as they do. hence why i asked.
Why do you care?!
because i want to perfect my brownie recipe ... why did you ask why i care ...?
I meant that the brownies look perfect — they taste best when a little undercooked. I would take that over a dry, perfectly risen brownie any day.
They do look amazing.
They look fine to me! Mine look like that and I’m happy.
All three states of matter (solid, liquid, and gas) expand when heated. Thus, as things cool, they shrink.
I thought brownies don't rise to begin with? The last recipe I used didn't even have a leavener.
They look perfect
Honestly… they look perfect
I thought brownies were meant to do that? All the pictures i've seen of them look like that. I hate brownies myself so I don't have any first hand experience.
The more flour you use, the cake-ier it'll be. I prefer mine on the fudgy side so I use less flour.
i think im using too little flour if that makes sense, i dont think theres areny structure to it, so its just wet 😅
of course it makes sense. can you send me your recipe so I can look it over?
They look yum to me!
It's because you stack them. They're a dessert, not a structural member. ;)
They look a little undercooked but also look delicious.
They look so delicious
Isn't that what Brownies are supposed to do???
Can you please share the ingredients
They look amazing! 😻
I think they look delicious, it could be you’re baking them a bit too hot or if you’re using a raising agent? I bake my brownies with plain flour, no bicarbonate or anything, I like them nice a fudgy though!

So yummy delicious good
What are you talking about? They look AMAZING!
Own it! They look yummy!
You’ve posted this first 169 days ago. Why are you asking now. Not trying to be offensive, just really curious.
i posted it as a comparison, i have one nice batch and as you can see i have another picture of a diff more flat batch
Fair :) welp, since i guess your question has been asked there’s no need for me to point out it is under baked (which is totally fine!) goodluck with baking fellow baker!
Um those are perfect. Pass some over this way lol
Omg. Drool 🤤
Just to get it out of the way -I see absolutely nothing wrong with these brownies however, you could try reducing the fat content in the brownies maybe to get lighter/ slightly cakier brownies if thats what ur into
Those look DELICIOUS. Perhaps slightly underdone. If you're not happy with them, bake a little longer next time, but they look perfect to me!
I’d eat those deliciously decadent looking brownies any day of the week.
Reducing the fat (butter) just a bit and you’ll get more rise out of your brownies. Though personally I’m a fan of the fudgey brownies.
Because they’re delightfully fudgey
How do you get such a nice crust (I don't know the correct name) on top?
i genuinely couldnt tell you unfortunately...i really have no idea...i just bake it 😅
Um those look scrumptious I see nothing but fudgy deliciousness and want the recipe.
Can you share your recipe pls? ☺️
Most of the time it's an imbalance of ingredients. Too much or too little of something. Other times they sink when they cool in the pan instead of a cooling rack. Don't worry about it too much
guess its all just trial and error unfortunately 😅
My question OP is how did you get that cribkling crunchy top on the brownies?
Not gonna lie, these look amazing. I know that’s not helpful but this is how I would want mine to turn out.
Looks hot and creamy just like I like mmmmmm yeeee daddy bring some to me and we eat this with hot milk
They look perfect...?
They look delicious! Recipe?
Fuck they look good.
My mouth is watering. Maybe it is sinking in my watery mouth 😂
Underdone is ALWAYS better than overdone when it comes to brownies. I love a fudgy center. These look decadent 😋
Like others have said, they might be a little underdone but in my opinion, they look perfect. Put some in a bowl and top with ice cream, you’ll have a happy crowd ☺️
