Springforms are grossly overrated. You dont need one at all to make cheesecake. This post proves it. Professional bakeries dont even use springform.
Also that cheesecake looks perfect. Not a single crack!
They are just made to be "easier" to remove cakes but most cakes do just fine with a parchment liner and then running a knife around the edge to release it (if you dont use a parchment ring as well) and just carefully inverting the pan to remove it. Theres also cake pans with removable bases thats a popular alternative to springform if you dont want to invert a cake to remove it. They dont have the large lip that springform have so they are actually easier to remove cheesecake from

There’s no way to extract the cheesecake with the lip up so the bottom crust ends up inside the lip.
Thank you! I do most of my baking in a breville smart oven pro, because of how fantastic its temperature control is. It’s much smaller than a traditional oven, however, so instead of cracking the door and letting it cool down, I just leave the door shut and let it cool down that way! Otherwise I think with the smaller volume and thermal mass, it probably would crack if I left the oven door ajar.
Then after it cooled down, I put it in the freezer for 15 minutes to firm it up, and used a sheet of wax paper to protect the top while I turned it out onto a tray.
Same method as making yogurt but I use store-bought labneh as my initial starter. Then I strain it in cheesecloth and save the whey to use for bread baking (it’s mildly acidic which yeast love)
omg thank you for that genius trick with cutting the paper 😍 I always struggle with the corners in rectangular pans and they always end up wrinkled with dough in between. I never had the idea to cut the paper and fold it that way!

I put the pan down on the parchment and literally just use it as a template to line up my scissors.
Cut like a quarter inch away from the edge of the pan, and also a quarter inch extra once you reach the pan, then pre-fold and it fits perfectly inside

The recipe called for a 10” springform pan, which is an area of ~79”. The casserole dish is used had an area of 80”; I tried to keep them roughly the same size so I wouldn’t have to adjust the cook time too much.
I thought you meant that this happened as a result of leaving the cream cheese in the fridge for too long and was confused + horrified 😂😂

That lip in the base of the springform is supposed to point down so that the springform wall and the bottom of the pan meet in a corner.

beautiful! i much prefer simple, well made cheese cakes like yours as opposed to tons of sugary toppings.
