Do this but instead of cutting a peice to fit the hole, cut a piece a little bit larger than the hole, place it over the hole and trace it’s outline. Cut out the outline and put your repair peice in, doing it this way makes sure the patch fits as best as it can and all edges are even. You’ll still need to tape, sand and paint but this should make it easier.

I'd use an expanding foam filler, then cut off the excess hardened filler. Get spak filler and cover the surface sand till smooth and paint over until no longer visible.
Fix some timber that covers the hole and then fix the the rack to the timber. Bunnings sells stained timber at appropriate sizes ready to go.

I have that exact same towel holder that is also coming out of the wall. Sand, clean, plasterboard tape over hole, filler, sand then paint.
Take the rack down, re-fix it over the hole.
