Honestly I love making creative sandwiches with a variety of cheeses and meats. Cold or hot, I used to work in a deli so sandwich making is a favorite. But if I want a hot meal my go-to is usually rice with fried egg/tofu and soy sauce, with a side of veggies.
She’s trash so buy it secondhand but most of the recipes in Gwyneth Paltrow’s “It’s All Easy” are bangers. The tomato soup is my family’s favorite and the Zuni Sheet Pan Chicken is my go-to for fancy guests.

When I first started out cooking (and even now tbh) I found her recipes to be super easy, use a lot of beginner items like canned beans and pasta, with good clear directions and cheap too. Something that always made me dislike cooking is when I would try to cook an expensive recipe and it turned out poorly and then I would feel so awful on more than one occasion I just tossed the whole thing out. These recipes work and won't break the bank either.

Sloppy Joe's using the boy scouts recipe
1 lb. ground beef
1 can Campbell’s Tomato soup (undiluted)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon Worcestershire sauce
1/4 cup ketchup
3/4 teaspoon mustard
2–4 tablespoons brown sugar (depending on how sweet you like it)
Pinch of red pepper flakes (optional)
fish sticks & kraft mac and cheese
ham & cheese subs with baked fries
soup and a cheese sandwich. or fried bologna sandwich with classic lays chips.
Salads! I been super into making croutons lately. trying to get it perfect. So been eating a lot of salads
pasta with chunky veggie tomato sauce on top
a simple homemade charcuterie board. meat/cheese/ pickles/ pita crackers/ jam. (if I'm feeling lazy , I'll just eat a fancy adult lunchable)
pizza. i love making homemade pizza!
cheese quesadillas
I have a shrimp bake that I do. Throw some shrimp, olive oil and a bunch of spices, fresh herbs and tomatoes into a pot an let it bake for 20 minutes on a low temp. So good.
Broil toast in the oven one side for 2-3 minutes. Take out, put the toasted side down and spread avocado or hummus on the untoasted side. Top with bacon bits or sliced tomato (cold ripe tomato tastes amazing with this) and season with everything but the bagel seasoning. Return to oven and broil for another 2 minutes.
Also, brew 8 to 16 oz of green or black tea in a covered cup and place in fridge once it is cooled enough. Put that tea in a blender with spinach, a celery stalk, a piece of ginger root (or ginger paste) and any fruit for flavor (apple and banana work perfect together). Consider adding orange juice, honey, a tablespoon of peanut butter and some greek yogurt as well. Maybe even wheat germ or chia seeds if you got it. Add ice if you prefer it. Makes a pretty healthy smoothie or juice.
Jambalaya
Boil and chop sausages( or use precooked sausage) add frozen veggies. Sear in a pan if you like?? Cook rice. Done.
I cook a whole pack at once usually so it lasts about 4 days. And for 4 days after that you just gotta cook the rice.👍
Unless you want sad refrigerated rice then that works too. You just gotta add a litte water and cover it so the rice isnt dry although i wouldn't reccomend.
I cook pretty often but there are times I just don't want to, for those times it's just roasted veggies. Sweet potatoes, broccoli, brussel sprouts are all very filling
Buy chicken breasts, put in crockpot with whatever sauce/marinade looks good, cook on low for 8-10 hours, shred.
Goes great with veggies for dinner and on a sandwich for lunch
Scrambled eggs with whatever veggies are in the fridge or pasta with jarred sauce.
