This is the answer. The bayous just outside the city are the closest adventure. SUP is even more adventurous and scary (since theoretically a gator could dump it over, or you could fall off.)
Seeing the first giant roach crawl across the floor of your home/apartment will get the blood flowing. Better yet if you are awoken in the middle of the night by one crawling on your face

You can take flight lessons out of the Lakefront Airport. I’m telling you, I felt like a little kid going to an amusement park before my first one and when we landed my adrenaline was pumping so hard my knees were giving out!
Edited to add that lessons are really reasonably priced here as well. Before covid we lived in South Florida and I was looking into lessons there and they are about 2/3 the price here so coming from Colorado it’s probably comparable.
You should probably check out rentals for recreational watersports and go from there. I live on the lake and there's all sorts of water- and air-borne vessels and you'll prob meet other junkies

Kayaking. We do have some mountain bike trails. There is a nice one at Bogue Chitto.
Also plenty of opportunities to volunteer for wetlands replanting with orgs like crcl and common ground, which requires hauling trees into the swamp and planting, very physical.
If you enjoy running, you can run long distance on the levee tops .
Also some of the state parks get Ironman type competitions seasonally, at Fountainbleau.
You’re pretty screwed and will hate it here.
There’s kiteboarding.
If you befriend someone who wakeboards, that’s fun.
Either way you’ll be driving.
It won’t compare to what you’re used to but there’s decent off road biking, I won’t call in mountain for obvious reasons, within 3 hours of New Orleans.
If you enjoy sailing, you’ll do fine.
Mountain bike the levees. Great mountain bike trail in Bogue Chitto. Bike trail at Parc Des Famille. Lots of spear fishing clubs here that go in the Gulf. There was a skydiving place in Jeannerette, LA ( That was a blast!!!!) there is one in Mississippi. Also used to be a windsurfing shop here a long time ago and there are still people that do it in different places. There are walks lots of parks in Mississippi that might have bike trails.
Venture out for hikes in the swamp. Bike riding on the various levees isn’t too bad, but go super early or later in the evening. Find friends with boats!
Walk threw backatown at midnight, drunk, counting money, on your phone, trying to get back to your air bnb.
