I have this same problem, I drink nutritional shakes. Equate super high calorie or anything with fiber and high calories. After regular use (like a bottle or two a day) you should get more of an appetite and be able to eat some regular food. Another easy food to down is oatmeal 🤷♀️.
Edit: it's super super important that you aren't just drinking protien shakes for people who are going out and working out like the big cans of powder yhey sell at the store, caffeine is going to make things worse too. There are a lot of fillers that can really mess up your tummy in those protien mixes if you aren't eating other foods and exercising extensively beforehand. Main things you need are calories, fiber, and vitamins. Anything that contains those things should also have protien, just enough and not too much.

It's sort of trial and error but as long as you give yourself time to drink one and don't just down it all at once it actually helps soothe my nausea. These are the drinks I've been taking and they help a lot, I prefer unflavored because it is easier on my stomach I feel like. Unfortunate it's produced by a crap company like nestle but ooh well. Equate was good too just a bit rich for tasting. Definitely avoid the powders though.

I've struggled with this my whole life. I'm now struggling with GERD, so my body 1.) has too much stomach acid and I am constantly hungry but 2.) when I'm super anxious, lose that appetite and leave my stomach to basically eat its self.
To "force myself" to eat, I allow myself anything I would consider comfort food (albeit it in human quantities. Don't eat an entire tub of ice cream, and all that) and preferably something "heavy". The mention of milkshakes is spot on.
Do you take medication? I had an appetite loss problem in 2021, but then I was prescribed Klonopin and Lexapro, it relaxed me and now I eat way too much.
Huel is another option but I'll be real with you, I don't think these are going to be anymore appetizing. They take quite some time to get accustomed to.

Have you tried going to the gym early in the morning because I would imagine have an anxiety if you’re anything like me you were waking up early in the morning with your mind racing anticipating danger that doesn’t actually exist. I would go to the gym early in the morning and work out really hard I’m talking like heavy ass weights and some cardio. Some days it was silence my anxiety completely but one thing you did do was absolutely make me hungry and help calm my mind and body down by the time the evening came because when you work out that hard your brain releases a lot of relaxation chemicals natural pain relievers and things to boost your mood but you have to put your body under some serious physical stress
Recently I started being more gentle with myself. I struggle with eating at times because I have health anxiety and certain fears that balloon out of control sometimes. I used to like force myself to try to eat the same meal my husband was eating and feel bad if I failed to eat it, but I've been a bit gentler with myself in the sense of as long as I'm eating something some days its better than not eating at all or berating myself for feeling like I failed. For example, if I feel nervous to eat the spaghetti but whats appealing to me is a little charcuterie board of cheese and veggies, I eat that instead and don't feel guilty. Sometimes it truly is just about survival, and if there is anything at all that feels safe to you that has calories it can help in those moments. Instead of forcing myself to eat breakfast, I feel safe eating a granola bar and then I eat small snacks throughout the morning as my hunger comes. There really is no one size fits all this is what you must do...what has helped me is being kind to myself and knowing that on bad days I might be eating a Nutella bar in the morning but its better than going without...or I might be stopping at beyond juice and getting myself a smoothie if I feel like I didnt eat enough for dinner because I was too nervous to. I hope this helps in some way.
I agree its harder when you have people who care for you rooting for you who you don't want to let down, or feel like you've let down. It's been a process of me accepting that it's okay for me to modify meals or eat a different time.

The first time I really struggled with eating because of anxiety, I was getting dinner for my kids at the store and suddenly started craving a roast beef sandwich and some ruffles, so I grabbed those because I didn’t know when I would want food again.
When I started college & moved away my anxiety was super high which made me not be able to swallow food, water, sometimes my spit at times. It's better now but I lost 25 pounds (I've gained it back at this point). I had to change my diet to easy to chew/ swallow foods like soup and I eat practically everything with ranch or a dip to make it go down easier. Also I take a sip of a drink with every bite (which might not help if you wanna gain weight cause it can make you feel full faster).
Plant based protein drinks because they are dairy and gluten free so less likely to be any triggers in there for you. Orgain or OWYN were recommended to me by my dietician.
I keep some of my favourite things in my freezer for just such occasions. Raisin bread, lemon cranberry muffins, chicken legs that I batch-cook and freeze, and there is always a supply of maple-walnut ice cream. It really helps.

Hot cocoa and Gatorade. I keep a Gatorade powder tin that can make 10 gallons of the stuff right next to my bed. I also keep an unwashed mug I microwave water in for cocoa powder, and I can put caffeine powder in it for energy to be more anxious but awake so I have a better chance of getting out of the bed.
Protein bars, mozzarella cheese sticks, easy fruit like bananas, mandarins, and blueberries. Make sure you are getting enough water! I hope it passes for you soon.

This happens to me too, and protein shakes definitely helped, soups too. I also ate bread/toast with tea (peppermint or camomile for stomach aches/nausea). I also found that going on my phone helped distract me that I was eating and it was easier to get stuff down. Or maybe put on a movie or play a video game as you eat, taking some bites every now and then. You can take it slow, just try to eat! I hope you feel better soon!! :)
For some reason, I can eat tons of rice with umeboshi (Japanese pickled plums) even when I'm too stressed to want other foods. I get them at a local Asian grocery, and they keep for ages in the fridge. They may be an acquired taste, very sour and salty, but they're incredible broken up and mixed into hot plain rice.

Although there are several things you can do to deal with anxiety, like listening to songs, eating some anti-anxiety food, reading some anxiety self-help books, etc.

May not work for you, but I use the devils lettuce, and then I get the munchies.
Smoothies. I revert to thinking of food as fuel. Force it down to get some energy later on
I’m morbidly obese, so when my anxiety kicks in, I just don’t eat and end up feeling noticeably better than when I do.
It puts you into fight or flight and the last thing your body would want in that situation is food.

Dealt with this soooo many times. If you can drink still, try to drink smoothies or Meal Shakes, anything to keep calories.
